It’s a key ingredient for baking and cooking. After the sugarcane is cut and crushed, the juices are extracted and boiled. The three grades of Brer Rabbit Molasses are created by the length of the boiling process:
- The first product resulting from the boiling process is Brer Rabbit Mild Flavor Molasses. As only a small amount of sugar is removed, Mild Flavor has the lightest color and is the sweetest of Brer Rabbit Molasses – perfect for sweetening hot cereals, yogurts or hot drinks, like coffee, tea or cocoa.
- The second product resulting from the boiling process is Brer Rabbit Full Flavor Molasses. As more sugar is removed, Full Flavor is more concentrated and has a darker color and richer flavor than Mild – essential for gingerbreads, cookies, pies, cakes, and glazes.
- The result of the final boiling process is Brer Rabbit Blackstrap Molasses, which is the most concentrated and has a bold, robust flavor – key for slow-cooked dishes like baked beans and barbeque sauces. Blackstrap also provides Calcium and Magnesium and contains Potassium.
The remaining juice from the boiling process is placed into a high-speed crystallizer, spinning out molasses while the sugar in the juice crystallizes.
